Griddled Gammon with an Apple & Apricot Glaze

SERVES 4

Gammon steaks cook beautifully and are also great
for the barbecue.  This recipe can either be cooked on the
barbecue, on a skillet / grill pan or frying pan; which ever
way, the gammon will be fullof flavour and moisture.

INGREDIENTS

4 gammon steaks
4 dsp. apricot jam
1 thsp. of sherry or soy sauce
½ tsp. mustard

1 red & 1 green apple (quartered & sliced)
1 dsp. of oil
1 oz. (30g) fat
1 oz. (30g) soft brown sugar
2 dsp. lemon juice
4 spring onions chopped (optional)

METHOD

Heat the apricot jam, sherry, and mustard in a small pan
and while still warm, pour over the gammon steaks.  If warm you
will find the flavours work much quicker as a marinade.  Leave
to marinade for 5 - 20 mins. before cooking on either the
barbecue / grill or frying pan.  If frying add 1 dsp. of oil to the
pan before cooking or if using the grill pan, brush the ridges
with oil to prevent the steaks sticking - cook for 2 mins.,
either side over medium heat.

To garnish, melt the fat in a pan, add the soft brown sugar,
lemon juice, sliced apple and spring onions.  Cook for 1 - 2 mins.
until the sugar has dissolved, and caramelised and the apples
and spring onions are coated and golden.

Serve on top of the golden apricot glazed gammon steaks.

Delicious with baked potato, pasta or salad.
